Makes 7-8 sliders, serves 3-4 

Double Recipe for bigger gathering

INGREDIENTS:

·       1 lbs ground chicken

·       2 TBS Vegetable Oil

·       1 ½ TBS Dijon Mustard

·       1 ½ TBS Worcestershire Sauce

·       1 shallot, chopped

·       1 ½ tsp Creole or Cajun Seasoning

·       1 tsp Kosher Salt

·       ¼ cup fig preserves

·       ¼ cup favorite BBQ sauce (we used Sweet Baby Rays)

·       4 oz Goat Cheese

·       Dinner Rolls 

Place ground chicken in a medium sized mixing bowl. Heat grill pan over medium high heat. Brush with vegetable oil.  In a small food processor, pulse together mustard, Worcestershire sauce, shallot, and spices until smooth. Mix into chicken. Scoop with large ice cream scoop on a heated grill pan. Slightly press top of mound with back of scoop. Cook for 4-5 minutes per side.

Meanwhile, mix together equal parts BBQ sauce and good fig preserves. Slice dinner rolls in half and butter the center. Warm dinner rolls in warm oven while burgers cook.

To assemble burgers, spread top with a good amount of goat cheese. Top with dollop of figgy BBQ sauce. Add burger patty and bottom of bun. Enjoy!
