May Crop: Vidalia Onions
Georgia designated the original sweet onion, the Vidalia®, as the official state vegetable in 1990 and today it is the most well-known onion around the world. First grown in Toombs County, Vidalia® onions are known as the “world’s sweetest onion” due to the unique combination of soils and climate found in the 20-county growing region. The official ship date for the Vidalia® is always around mid-April and you can find the sweet onion available through the summer months. The Vidalia® can be used in almost any recipe that calls for onions; however, unlike other varieties, the Vidalia® onion can be eaten raw without fear of watery eyes or a burning mouth.
