January Crop: Greens
“Greens” is a broad term used to describe numerous leafy varieties. In Georgia, the most popular greens include kale, mustard and turnip greens, as well as collards. Greens are all members of the cabbage family and can be grown together or separately; they can be cooked or eaten raw and are very low in calories with no cholesterol. One tradition is to eat greens on New Year’s Day to invite prosperity into the household.
